Starting from Marskgården Højergård, there are many tours to choose from.
You can pick oysters on a single day or you can combine oyster picking with one of the Wadden Sea's other attractions, black sun.

On our oyster safari, you get to take your oysters home with you. We've gathered a wide range of oyster recipes from some of Denmark's very best chefs so you can cook your own oysters in a gourmet way at home.

As far back as the Middle Ages, oysters were shucked right here in the Wadden Sea, and from 1759 they were packed and stored in the oyster warehouse at Kiers Gård in Højer before being sent to the Russian court, among others. In recent years, Pacific oysters have taken over the banks of the Wadden Sea, and our experienced nature guides will take you out to the oyster beds at low tide to pick all the oysters we can eat! We pick plenty of the coveted delicacy to take home to Højergård and you are of course welcome to take oysters home too.
From the oyster beds, the bus returns to Højergård, where you will learn how to open, prepare and eat oysters in exciting and tasty ways in the kitchen or over an open fire with a dedicated food guide.
Oyster Safari with Wadden Sea Experiences is a unique opportunity to see the unique Wadden Sea in a whole new way and taste the amazing Pacific oysters right where they are born.
The oyster season extends from October to April, as it is recommended that you only harvest oysters in the cooler half of the year. We therefore kick off the oyster safari season when the sea temperature drops in October and organise trips until the end of April, when the sun starts to warm the sea again. The reason why it is best to collect oysters in the colder months is to minimise the risk of the warm sea water developing toxic plankton algae inside the oysters. In any case, we only collect oysters from the cleanest parts of the Wadden Sea.
Besides the weather and water temperatures, the tides also have a huge impact on our oyster safaris. The tours can only take place when the tide is low, so we can get out over the mudflats to the oyster beds with the many fresh Pacific oysters. Therefore, the tides are in control on these trips, and huge differences in weather, light and season mean that every oyster safari tour is different.
Nature is never predictable, which is what makes oyster safaris with Wadden Sea Experiences completely adventurous and unique.
