Grilled sherry cream oysters with spinach

Recipe for 4 people

Switch on the grill. Pour the sherry, cream, lemon juice and mustard into a pan with salt and pepper. Reduce the liquid by half over the grill or on the hob. Add the spinach and cook it until it folds up completely. Open the oysters and drain the water.

Cut the oysters free and leave them in the deep shell. Place a tablespoon of the cooked sherry, cream and spinach over the oysters and grill until lightly golden.

12 oysters
250 nl. cream 38%
6 tsp. fino sherry
2 tsp. lemon juice
1 tsp. Dijon mustard
2 handfuls of baby spinach
A little sea salt
Freshly ground peppercorn mix
