Spring oysters with medicinal oyster mushrooms

Recipe for 4 people

Open the oysters, drain the water and leave the oysters in the deep shell.

Add the selected ingredients and place the oyster shells on a grate over a fire until the liquid has bubbled merrily for a few minutes.

Carefully remove the shells from the oven/grill/fire and enjoy the contents with toasted slices of good wheat bread.

Narrow-leaved thyme, grows wild on Rømø.

4 tbsp. grated raw potato
4 tbsp. North Sea cheese from Thise Dairy
4 tbsp. chopped chickweed, salsify or nettle
4 tbsp. organic cream
