Oysters with mignonette dressing

Recipe for 4 people

Peel and finely dice the onion. Pour the wine vinegar into a bowl with the onion and grind pepper. Pour a teaspoonful over the oysters before serving.

Mignonette dressing is a traditional dressing for oysters. The acidity of the wine vinegar and the crispness of the onion go really well with raw oysters.
